Somos el primera café en Denver que es propiedad de mujeres, inspirado en Guatemala, y completamente bilingüe.

En Guatemala un convivio es una reunion en la cual todos se sienten invitados. Nos reunimos sobre mesas llenas de nuestros amigos y vecinos para compartir, conectar y disfrutar las deliciosas bebidas y comidas enraizadas en cultura. En Convivio Café queremos celebrar las raíces de nuestro vecindario - algunos profundos y otros recién sembrados - mientras crezcan juntos. Algunos prefieren americanos sobre atoles, o pan tostado con aguacate sobre pan dulce. No importa tu preferencia, estas invitado a nuestro convivio.

Valoramos a la COMUNIDAD por ser buenos vecinos.  Creemos en el poder de compartir espacios donde juntos podemos construir y desarrollar cultura. Estamos activos en nuestra comunidad y apoyar a otros que hacen lo mismo. 

Valoramos a COLABORACIÓN  a través de trabajar con socios con la misma mente - productores, chefs, artesanos y organizaciones comunitarios - para que podamos hacer algo más grande y más mejor para todos. Creemos que las mejores cosas pasan cuando los hacemos juntos. ​

 

Valoramos a DIVERSIDAD, por celebrar las diferencias como resistencia. Creemos que todos traen algo a la mesa en nuestro convivio, y toparse con otros que celebran de manera diferente nos hace más fuerte. ​

Valoramos a LA TIERRA Y LA GENTE  por tomar decisiones de manera consciente sobre de quién compramos nuestros productos, cómo los pagamos, y cómo respetamos al medioambiente en nuestro trabajo. Creemos en la belleza de honrar a la cultivación y arte necesario para traernos la comida y bebida que amamos.

¡Hola! Aquí estamos, Kristin y Vivi  :) Nos conocemos en 2015 en Re:Vision, una organización sin fines de lucro, unas cuadras de el futuro Convivio Café.  De pronto nos conectamos sobre nuestro amor colectivo para la hospitalidad, comida enraizada en cultura, comunidad, y por supuesto en Guatemala. Planeamos unas clases y cenas e invitamos a la diversidad entera de nuestros vecinos del suroeste de Denver para compartir mesas llenas de recetas centroamericanas tradicionales, compartir historias, y mucho spanglish. Decidimos - se necesita un lugar así en nuestro vecindario.   

Kristin trae su experiencia en café y agricultura trabajando con caficultores en Guatemala, y Vivi trae su experiencia como una cocinera Guatemalteca autodidacta y defensora de los derechos para inmigrantes.  Mezclamos todo eso con nuestros años en trabajo comunitario y comida justicia... y ¡listo!  Convivio Café empezó a preparar el café.  

En el medio de 2020 - un año que todos esperamos con ansias doblar la esquina - a year we're all looking forward to turning the corner on - decidimos que no hay mejor tiempo para avanzar nuestro sueño y crear un espacio para mas convivencia en nuestra comunidad.

Kristin Lacy
Co-Owner & Head of enjoying coffee aromas + early mornings

I started my first barista job at my hometown's only coffee shop and became fascinated by the power of cafés to make community connections flourish. Over the years, I've worked locally and abroad in community development including three years in Guatemalan where farmers' graciously let me sleep on their floor and learn to harvest corn with their kiddos. I also learned a lot about the limitations of the coffee supply chain and how little of the profits stayed with farmers. I fell in love with the warm and welcoming hospitality of Guatemala, being invited to so many convivios and early morning cafecitos with families that welcomed me with open arms as a gringa and always fed me til I was past full. After coming back to Denver, I've loved being a part of the incredible and diverse community in Southwest Denver whether through  supporting Vietnamese business owners on Federal, building food access programs with Re:Vision Promotoras, and sharing garden goodies on my very Latinx block. I love gathering people who want to talk ideas for building a better world. At Convivio, I want to share my passion for the power of cafes to build community, and set tables where we all feel welcome.

I was born in Guatemala, immersed in a culture that revolves around hospitality, café, and delicious food.  I always loved to cook (and eat), with one of my earliest memories playing ‘restaurant’ with my twin sister in Guatemala - I made the food, the menus, set the table and served, while my sister was always the welcome guest. I am a self-taught cook, and since immigrating to Colorado I've aimed to recreate the same sense of a welcoming community around my own table, always finding any good excuse to cook, host, and feed people. I've been a cooking class instructor with Re:Vision, as well as with the kiddos at the Sun Valley Kitchen. I have always wanted to have a place where all can be welcome and to share that same spirit where I grew up, which so many other cultures also share. At Convivio, I want to share the recipes I was raised on and create the welcoming open space where guests can breathe and just be.
